The most popular dishes in Polignano a Mare, the “Pearl of the Adriatic”, can be nothing less than fish dishes: white sea bream, rockfish, gilthead bream, shellfish, snapper, and octopus are prepared with great simplicity, according to tradition. Remember to try the Tiella alla Barese, also called Patate, Riso e Cozze – baked casserole with potatoes, rice, and mussels – or a delicious plate of freshly opened sea urchins, strictly eaten by the seaside.
